- 1/2 cup pumpkin puree

- 1/4 cup brown sugar
- 1 large egg
- 2 Tbsp melted butter
- Cooking spray for frying

Step By Step Instructions


STEP ONE – In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon and nutmeg.
STEP TWO – In a separate bowl, whisk together the pumpkin puree, milk, egg and melted butter until smooth and well combined.


STEP THREE – Pour the pumpkin mixture into the dry ingredients and gently stir just until combined. A few small lumps are fine. Be careful not to overmix the batter.
STEP FOUR – Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
STEP FIVE – Scoop the batter onto the hot skillet to make pancakes about 3 to 4 inches in diameter, leaving a little space between each one.
STEP SIX – Cook for 2 to 3 minutes, or until the edges begin to set and the bottoms are golden brown. Flip and continue cooking for another 2 to 3 minutes, until cooked through.
