Description

These fluffy Pumpkin Pancakes are filled with pumpkin, brown sugar and warm cinnamon and nutmeg for an easy fall breakfast. Ready in just 20 minutes, they’re delicious served warm with maple syrup, whipped cream and chopped walnuts.


Ingredients

1 cup all-purpose flour

1/2 cup pumpkin puree

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 cup milk

1/4 cup brown sugar

1 large egg

2 Tbsp melted butter

Cooking spray for frying

Toppings:

Maple syrup

Whipped cream

Chopped walnuts or pecans


Instructions

  1. In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon and nutmeg.
  2. In a separate bowl, whisk together the pumpkin puree, milk, egg and melted butter until smooth and well combined.
  3. Pour the pumpkin mixture into the dry ingredients and gently stir just until combined. A few small lumps are fine. Be careful not to overmix the batter.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
  5. Scoop the batter onto the hot skillet to make pancakes about 3 to 4 inches in diameter, leaving a little space between each one.
  6. Cook for 2 to 3 minutes, or until the edges begin to set and the bottoms are golden brown. Flip and continue cooking for another 2 to 3 minutes, until cooked through.
  7. Serve the pumpkin pancakes warm with maple syrup, whipped cream and a sprinkle of chopped walnuts.

Notes

Store leftover pumpkin pancakes in an airtight container in the refrigerator for up to 4 days. Reheat them in the microwave, toaster or a skillet until warmed through.
