  • 3-pound bag russet potatoes, peeled and cubed
  • ¾ cup sour cream
  • ½ cup heavy cream 
  • ½ stick salted butter, softened
  • 2 cups cheddar cheese, shredded and divided
  • 6 slices bacon, cooked and crumbled
  • ½ cup green onions, sliced
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Step By Step Intructions

STEP ONE – Add 4 quarts of water to a large stock pot and bring to a boil. Add potatoes and cook until tender, then drain and add to a large mixing bowl.

STEP TWO – Preheat oven to 375 degrees F. Grease a 9×13 baking dish.

STEP THREE – Mash potatoes, then add sour cream, heavy whipping cream, butter, salt, and pepper, and continue mashing until combined.

 Cheese, half the bacon, and half the green onion slices are added to the mashed potatoes.

STEP FOUR – Mix in half of the cheese, half the bacon, and half the green onion slices into the mashed potatoes.

Mashed potato mixture is spread in a 9x13-inch baking dish.
Remaining cheese and bacon are added to the top of the potato mixture.

STEP FIVE – Spread mashed potatoes in an even layer in the 9×13 baking dish.

STEP SIX – Top with remaining cheese and bacon.

STEP SEVEN – Bake uncovered for 26-28 minutes, or until just beginning to brown.

STEP EIGHT – Top with remaining green onions, then serve.

Green onion are sprinkled on top of the potato mixture.

Storage Instructions

Store leftover Twice Baked Mashed Potato Casserole covered or in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave until heated through, or cover the casserole with foil and reheat in a 350°F oven until warm.

6 slices bacon, cooked and crumbled

1/2 cup green onions, sliced
