- 3-pound bag russet potatoes, peeled and cubed
- ¾ cup sour cream
- ½ cup heavy cream
- ½ stick salted butter, softened
- 2 cups cheddar cheese, shredded and divided
- 6 slices bacon, cooked and crumbled
- ½ cup green onions, sliced
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Step By Step Intructions


STEP ONE – Add 4 quarts of water to a large stock pot and bring to a boil. Add potatoes and cook until tender, then drain and add to a large mixing bowl.
STEP TWO – Preheat oven to 375 degrees F. Grease a 9×13 baking dish.
STEP THREE – Mash potatoes, then add sour cream, heavy whipping cream, butter, salt, and pepper, and continue mashing until combined.


STEP FOUR – Mix in half of the cheese, half the bacon, and half the green onion slices into the mashed potatoes.


STEP FIVE – Spread mashed potatoes in an even layer in the 9×13 baking dish.
STEP SIX – Top with remaining cheese and bacon.
STEP SEVEN – Bake uncovered for 26-28 minutes, or until just beginning to brown.
STEP EIGHT – Top with remaining green onions, then serve.

Storage Instructions
