Ingredients You’ll Need

- 3-4 boneless skinless chicken breasts (about 2 lbs)
- 2 (10.5 oz) cans cream of chicken soup
- 1 ½ cups sour cream
- ½ onion, diced
- 3 garlic cloves, minced
- 4 tablespoons butter
- 1 ½ cups Ritz crackers, crumbled
- ¾ teaspoon Italian seasoning
- Fresh chopped parsley, for topping
Step By Step Instructions


STEP ONE – Place chicken breasts into Crockpot.
STEP TWO – Add cream of chicken soup, sour cream, onion, and garlic.
STEP THREE – Cover with lid and cook on low for 5-6 hours or high for 4-5 hours, until chicken is cooked and tender.


STEP FOUR – In the last hour, remove chicken breasts and shred using two forks. Stir the sauce well and then add the shredded chicken back into the Crockpot and combine.


STEP FIVE – In a microwave safe bowl, melt the butter in the microwave.
STEP SIX – In a mixing bowl, add the crumbled Ritz crackers and Italian seasoning. Pour the melted butter on top and stir well to combine.


STEP SEVEN – Sprinkle the mixture over the chicken in the Crockpot. Cover and cook on high for the remaining hour.
STEP EIGHT – Top with fresh chopped parsley and serve.

Recipe Tips
- Boneless, skinless chicken breasts, thighs, or tenderloins all work well in this recipe. Serve the chicken whole or shred it before stirring it back into the sauce. If you prefer to leave the chicken whole, add the crushed crackers at the beginning of the cooking time.
- Swap the cream of chicken soup for cream of mushroom, cream of celery, or cream of chicken and herbs soup for a slightly different flavor.
- Green onions make a great substitute for white or yellow onion and can also be sprinkled on top as a fresh garnish.
- For a heartier one-pot meal, stir in frozen mixed vegetables, peas, peas and carrots, green beans, or sliced mushrooms during cooking.
