Notes

Recipe Tips

  • Boneless, skinless chicken breasts, thighs, or tenderloins all work well in this recipe. Serve the chicken whole or shred it before stirring it back into the sauce. If you prefer to leave the chicken whole, add the crushed crackers at the beginning of the cooking time.
  • Swap the cream of chicken soup for cream of mushroom, cream of celery, or cream of chicken and herbs soup for a slightly different flavor.
  • Green onions make a great substitute for white or yellow onion and can also be sprinkled on top as a fresh garnish.
  • For a heartier one-pot meal, stir in frozen mixed vegetables, peas, peas and carrots, green beans, or sliced mushrooms during cooking.
  • For even more flavor, mix cooked, crumbled bacon into the sauce before slow cooking.

Storage Instructions

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat gently on the stovetop over medium-low heat, stirring occasionally, until warmed through. You can also microwave individual portions in 30-second intervals, stirring between each, until hot.
