Crockpot Poor Man’s Stew

Ingredients You’ll Need

  • 1 lb lean ground beef
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3-4 yellow potatoes, peeled and cut into 1-inch pieces
  • 3 carrots, peeled and cut into ½ inch thick slices
  • 28 oz can diced tomatoes
  • 3 tablespoons tomato paste
  • 2 cups beef broth or water
  • 1 ½ teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 1 cup frozen peas
  • Fresh chopped parsley, for topping (optional)

Step by Step Instructions

Ground beef in skillet.
Ground beef mixture is placed in bottom of crockpot.

STEP ONE – In a large skillet, brown the ground beef with onions and garlic until cooked through. Drain excess grease then transfer the browned beef into the Crockpot.

Remaining ingredients are added to the crockpot.
Pease are added to the crockpot.

STEP TWO – Add potatoes, carrots, diced tomatoes, tomato paste, beef broth, Italian seasoning, salt and pepper.

STEP THREE – Cover and cook on low for 6-7 hours or high for 3-4 hours, until potatoes and carrots are tender. During the last 30 minutes, add the frozen peas and stir well.

 STEP FOUR – Top with fresh parsley.
