This Crockpot Poor Man’s Stew is a hearty, budget-friendly dinner made with ground beef, potatoes, and vegetables simmered in a rich, flavorful broth. It’s an easy slow cooker meal that’s perfect for busy weeknights and cozy family dinners.
Ingredients
1 lb lean ground beef
1 large onion, chopped
3 garlic cloves, minced
3-4 yellow potatoes, peeled and cut into 1-inch pieces
3 carrots, peeled and cut into 1/2 inch thick slices
28 oz can diced tomatoes
3 tablespoons tomato paste
2 cups beef broth or water
1 1/2 teaspoons Italian seasoning
Salt and pepper, to taste
1 cup frozen peas
Fresh chopped parsley, for topping (optional)
Instructions
- In a large skillet, brown the ground beef with onions and garlic until cooked through. Drain excess grease then transfer the browned beef into the Crockpot.
- Add potatoes, carrots, diced tomatoes, tomato paste, beef broth, Italian seasoning, salt and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until potatoes and carrots are tender. During the last 30 minutes, add the frozen peas and stir well.
- Top with fresh parsley.
