Description

This Crockpot Poor Man’s Stew is a hearty, budget-friendly dinner made with ground beef, potatoes, and vegetables simmered in a rich, flavorful broth. It’s an easy slow cooker meal that’s perfect for busy weeknights and cozy family dinners.


Ingredients

1 lb lean ground beef

1 large onion, chopped

3 garlic cloves, minced

3-4 yellow potatoes, peeled and cut into 1-inch pieces

3 carrots, peeled and cut into 1/2 inch thick slices

28 oz can diced tomatoes

3 tablespoons tomato paste

2 cups beef broth or water

1 1/2 teaspoons Italian seasoning

Salt and pepper, to taste

1 cup frozen peas

Fresh chopped parsley, for topping (optional)


Instructions

  1. In a large skillet, brown the ground beef with onions and garlic until cooked through. Drain excess grease then transfer the browned beef into the Crockpot.
  2. Add potatoes, carrots, diced tomatoes, tomato paste, beef broth, Italian seasoning, salt and pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until potatoes and carrots are tender. During the last 30 minutes, add the frozen peas and stir well.
  4. Top with fresh parsley.
