This Twice Baked Mashed Potato Casserole is the ultimate comfort food side dish made with creamy mashed potatoes, sour cream, cheddar cheese, crispy bacon, and green onions. Ingredients
3-pound bag russet potatoes, peeled and cubed
3/4 cup sour cream
1/2 cup heavy cream
1/2 stick salted butter, softened
2 cups cheddar cheese, shredded and divided
6 slices bacon, cooked and crumbled
1/2 cup green onions, sliced
1 teaspoon salt
1/2 teaspoon ground black pepper
Instructions
- Add 4 quarts of water to a large stock pot and bring to a boil. Add potatoes and cook until tender, then drain and add to a large mixing bowl.
- Preheat oven to 375 degrees F. Grease a 9×13 baking dish.
- Mash potatoes, then add sour cream, heavy whipping cream, butter, salt, and pepper, and continue mashing until combined.
- Mix in half of the cheese, half the bacon, and half the green onion slices into the mashed potatoes.
- Spread mashed potatoes in an even layer in the 9×13 baking dish.
- Top with remaining cheese and bacon.
- Bake uncovered for 26-28 minutes, or until just beginning to brown.
- Top with remaining green onions, then serve.
- Serve with dollops of sour cream on top.
