Slow Cooker BBQ Beef Brisket

Description

This Slow Cooker BBQ Beef Brisket recipe delivers incredible tenderness, flavor and simplicity, making it a favorite for comfort food lovers. The easy, slow-cooking process transforms the brisket into a juicy BBQ beef masterpiece that can be enjoyed in many ways!


Ingredients

4 pounds beef brisket (trim excess fat if desired)

1 tablespoon avocado oil

1 large onion, sliced

1 1/2 cups BBQ sauce (I used Stubb’s Sticky Sweet BBQ sauce)

1/2 cup beef broth

Parsley, for garnish (optional)

For the dry rub:

1 tablespoon brown sugar

1 tablespoon smoked paprika

1/2 tablespoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

1 teaspoon salt

1 teaspoon black pepper


Instructions

In a medium bowl, whisk together the BBQ sauce and beef broth. Set aside.

In a small bowl, combine the dry rub ingredients.

Pat the brisket dry with paper towels. Then massage the dry rub all over the brisket.

Heat a large skillet over medium-high heat. Once hot, add oil and then sear the brisket on all sides until browned, about 3-4 minutes each side.

Transfer the brisket into the bottom of the slow cooker pot and surround with the sliced onions.

Pour the BBQ sauce and broth mixture over the brisket.

Cover with the lid. Cook on LOW for 8-10 hours. For a smaller 2 pound brisket, cook for less time on LOW for 6-8 hours.

Once cooked, remove the brisket from the slow cooker and transfer to a cutting board. Slice or shred the meat then return it back to the slow cooker and stir into the sauce.

Garnish with fresh parsley if desired.

Optional step:

Make brisket burgers by adding the brisket into a warm hamburger bun, topping with coleslaw and pickles, and serving with a side of French fries or chips. Enjoy!

Notes

Storage and reheating:

Allow to cool before covering. Store leftovers in an airtight container for 4-5 days in the fridge.

Reheat in a baking dish in a 325°F oven with some beef broth or bbq sauce to keep it moist for 20 minutes or until warmed through. Or in a microwave-safe dish with some broth or bbq sauce to prevent drying out using 30 second intervals in the microwave until warmed through.
