Old-Fashioned Gingerbread Squares (Gift Mix)
When I used to own my own food company this recipe was always a best seller for me over the holidays as it was popular for a food gift.
This recipe makes enough mix for two bags/batches, and when packaged in a gift bag with the recipe included, it becomes a thoughtful and easy holiday gift.
This dessert is best served warm from the oven and it easily heats up for a few seconds in the microwave, or you can enjoy it cold as well.
The squares stay incredibly moist. A slice sampled three days after it was baked was still as fresh tasting as the first day. It is SO good with the optional lemon sauce!!

How To Make Gingerbread Squares
Well, it just doesn’t get any easier than this!
Place all ingredients into a large mixing bowl and stir until well-combined.

Next, divide the mixture in half. You should have 2 and 1/2 cups of mix for each bag/jar or cake that you are using.

How To Prepare Gingerbread Squares For Gift-Giving
I like to slide the bag into a tall cup and wrap the top over the lip of the cup. Then, I use a large-mouth funnel like the kind you would use for making jams and spoon the mix right in.
If you don’t have a funnel, then you can easily scoop it in with a small measuring cup.

Print a copy of the recipe below for the recipient or write it out by hand on Christmas paper.

Storage
Store the gingerbread squares in an airtight container for 3 to 4 days or in the fridge for 7 days.
Wrap with plastic wrap and freeze for 2 to 3 months. Thaw and warm before serving.

Ingredients
1 cup brown sugar, firmly packed
1 tbsp. coriander
1 tbsp. ground ginger
1 tbsp. baking powder
2 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg
1 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. baking soda
3 cups all-purpose flour
1 cup whole wheat flour
Instructions
1. In a large bowl, combine all ingredients together and mix well until thoroughly combined.
2. Divide mixture into two bags, each with 2 and 1/2 cups of mix. Seal bag.
Mix can be stored at room temperature for up to three months.

Description
A classic gingerbread squares recipe that is delicious when served warm from the oven with vanilla ice cream, sweetened whipped cream or Lemon Sauce.
Ingredients
2 and 1/2 cups Gingerbread Squares Mix (see recipe card above)
3/4 cup molasses
1/2 cup butter
1 egg, lightly beaten
Instructions
1. In a saucepan, over low heat, combine boiling water, molasses and butter; stir until butter has melted.
2. In a large mixing bowl, place 2 and 1/2 cups of Gingerbread Squares Mix, then add in the molasses mixture.
3. Blend in beaten egg just until combined.
4. Pour batter into greased and floured 8-inch square baking dish.
5. Bake in 350F oven for 35 to 40 minutes or until cake tester inserted in centre comes out clean.
6. Let cool in pan for at least 10 minutes before cutting into squares.
7. Serve with sweetened whipped cream, vanilla ice cream or Lemon Sauce. (recipe follows)
Notes
Lemon Sauce
The lemon sauce is optional, yet highly recommended!
In a small saucepan, mix together 1/2 cup of granulated sugar, 2 tbsp. cornstarch, 1 cup water, 1/4 cup lemon juice and 1 tsp. grated lemon rind. Bring to a boil over medium heat, stirring constantly until mixture is thickened and clear. Blend in 2 tbsp. of butter.
Makes 1 and 1/2 cups.
