Taco Bake Casserole With Tortillas Chips
One of the best things I love about this recipe is that it is so easy to change up and customize using your favorite flavored tortillas chips, cheese or toppings.
It perfect to feed a crowd with the best parts of a taco using seasoned ground beef, crunchy tortilla chips, black beans, salsa, cheese and a sour cream topping.
Whip up this mouthwatering easy Mexican casserole dish in no time for busy weeknights and watch as everyone is on time for dinner! It is so good with my Mexican cornbread recipe!
Great served with my Pico de Gallo, Mexican street corn on the cob Elote, guacamole and Mexican street corn pasta salad.
Ingredients
- Ground Beef
- Taco Seasoning – I used a store bought mix but a homemade taco seasoning works
- Chicken Broth
- Black Beans
- Diced Tomatoes – I used Rotel diced tomatoes
- Salsa – of your choice you can use mild, medium or hot salsa I used mild salsa
- Tortilla Chips – slightly crushed
- Mexican Cheese Blend – or refer to my best cheese for melting
Optional Taco Toppings
- Black olives
- Tomatoes – chopped fresh tomatoes
- Lettuce – shredded lettuce
- Green Onions – sliced green onions
- Sour Cream
Substitutions & Variations: Use any Doritos flavor of your choice or Fritos corn chips in place of the tortillas chips. Add sliced jalapeños or avocado to the toppings. Use your favorite cheese like cheddar cheese or Monterey Jack in place of the Mexican cheese blend. If you like to spice things up use a spicy salsa. You can use ground chicken instead of ground beef.
How To Make Easy Taco Casserole
STEP ONE – Preheat oven to 350°F. Grease a 9×13 baking dish.
STEP TWO – In a large skillet, brown the ground beef over a medium heat. Drain excess fat.
STEP THREE – Once the beef is browned, add the black beans, Rotel diced tomatoes, salsa and taco seasoning into the skillet. Stir everything together until fully combined.
STEP FOUR – Pour the chicken broth into the mixture and continue stirring until it’s well mixed.
STEP FIVE – Transfer the beef mixture into the prepared baking dish and spread it out evenly.
STEP SIX – Top with crushed tortilla chips and sprinkle with the shredded Mexican cheese blend.
STEP SEVEN – Bake for 18-20 minutes, or until the cheese is melted and bubbly.
STEP EIGHT – Let cool for 5 minutes then top with optional toppings such as black olives, shredded lettuce, chopped tomatoes, green onions and sour cream before serving.

Can I Make Taco Casserole Ahead Of Time?
Yes you can make it covered and stored in the fridge for up to 24 hours before baking. Add a few extra minutes to the baking time if cold from the fridge.
Can I add extra veggies?
Absolutely, you can add bell peppers, onions or corn to bulk up the casserole with more vegetables depending on your tastes.
How To Keep The Tortilla Chips From Getting Soggy?
You can add a fresh layer of tortilla chips on top just before serving or baking the casserole for a crunchy texture, especially if making it ahead of time.
Storage Instructions
Store using an airtight container in the fridge for up to 24 hours before baking. Add a few extra minutes to the baking time if it is cold from the fridge.
Reheat a single serving on a microwave-safe dish in the microwave using 30 second intervals until warmed through. Reheat half a casserole or for a crispy top in a 350° oven for about 10 minutes.
To freeze assemble the beef mixture in the casserole dish without the chips or cheese. Wrap tightly in plastic wrap and foil before freezing for 2 to 3 months. Thaw in the fridge overnight and top with tortilla chips and cheese before bake at 350° for about 20 minutes until bubbly.

1/4 cup chicken broth
1 can (15 ounces) black beans, drained and rinsed
1 can (14.5 ounces) diced tomatoes
1 cup salsa
2 cups tortilla chips, slightly crushed
2 cups shredded Mexican cheese blend
Optional toppings
black olives
chopped fresh tomatoes
shredded lettuce
sliced green onions
sour cream
Instructions

I made this tonight for my husband and myself and it was delicious! We ate it on tortilla shells with shredded lettuce, tomatoes, onions and sour cream. We are not fond of black beans so I used pinto beans and they added a lot of flavor. And, it was so easy to put together. Thanks for sending it to me.

I have been making this for years. The one thing I do differently is I put some of the salsa in the bottom of the dish then a thin layer of chips before the beef it makes a nice little crust on the bottom. And I do a couple of layers like lasagna. So salsa, chips,beef and beans if you mix the refried beans in it lays much better. then cheese of course. It cuts like a lasagna
