Ingredients You’ll Need

  • 2 lbs lean ground beef
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 29 oz can tomato sauce
  • 15 oz can black beans, rinsed and drained
  • 15 oz can dark red kidney beans, rinsed and drained
  • 15 oz can light red kidney beans, rinsed and drained
  • 10 oz can Rotel diced tomatoes and green chilies
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon dried parsley
  • 1-2 dash hot sauce, to taste
  • Salt and pepper, to taste
  • Chopped cilantro, for topping

Step By Step Instructions

STEP ONE – Heat a large skillet with a little oil over medium-high heat. Add the ground beef, breaking it apart as it cooks. Once browned, drain off any excess grease and transfer the beef to a 6-quart crockpot.

STEP TWO – Add the diced onion, minced garlic, tomato sauce, black beans, kidney beans, diced tomatoes with green chilies, chili powder, cumin, smoked paprika, garlic powder, oregano and parsley. Stir everything together until well combined.

STEP THREE – Cover and cook on low for 6 to 8 hours or high for 4 to 5 hours, until the chili is thick and the flavors have blended together.

STEP FOUR – Stir in hot sauce to taste, then season with salt and pepper as needed. Serve hot with chopped cilantro or green onions and your favorite chili toppings and sides.

Notes

Storage

Freezing
