This Crockpot Ground Beef Chili with Beans is a hearty, comforting dinner loaded with seasoned ground beef, three kinds of beans, tomatoes and plenty of bold chili flavor. Ingredients
2 lbs lean ground beef
1 onion, diced
4 cloves garlic, minced
29 oz can tomato sauce
15 oz can black beans, rinsed and drained
15 oz can dark red kidney beans, rinsed and drained
15 oz can light red kidney beans, rinsed and drained
10 oz can Rotel diced tomatoes and green chilies
2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon dried parsley
1-2 dash hot sauce, to taste
Salt and pepper, to taste
Chopped cilantro, for topping
Instructions
- Heat a large skillet with a little oil over medium-high heat. Add the ground beef, breaking it apart as it cooks. Once browned, drain off any excess grease and transfer the beef to a 6-quart crockpot.
- Add the diced onion, minced garlic, tomato sauce, black beans, kidney beans, diced tomatoes with green chilies, chili powder, cumin, smoked paprika, garlic powder, oregano and parsley. Stir everything together until well combined.
- Cover and cook on low for 6 to 8 hours or high for 4 to 5 hours, until the chili is thick and the flavors have blended together.
- Stir in hot sauce to taste, then season with salt and pepper as needed. Serve hot with chopped cilantro or green onions and your favorite chili toppings and sides.
