  • 2 (15.25 oz.) cans of whole kernel corn, drained
  • 1 (15.25 oz.) can of black beans, drained and rinsed
  • 4 ounces cream cheese
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup parmesan cheese
  • 1 large jalapeno, diced
  • 8 slices of bacon, cooked and chopped
  • 1 medium red onion, diced
  • 1 tsp. black pepper
  • 1 tbsp. green onions, sliced

Step By Step Instructions

  1. In a large mixing bowl, stir together the softened cream cheese and mayonnaise until smooth and creamy.
  2. Add the cheddar cheese, mozzarella, Parmesan, diced jalapeño, red onion, and black pepper. Stir until everything is evenly combined.
  3. Gently fold in the drained corn, black beans, and most of the chopped bacon, reserving a little for garnish.
  4. Transfer the dip to a serving bowl and sprinkle the remaining bacon over the top before serving.

Ingredients

2 (15.25 oz.) cans of whole kernel corn, drained

1 (15.25 oz.) can of black beans, drained and rinsed

4 ounces cream cheese

1/2 cup mayonnaise

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup parmesan cheese

1 large jalapeno, diced

8 slices of bacon, cooked and chopped

1 medium red onion, diced

1 tsp. black pepper

1 tbsp. green onions, sliced


Instructions

  1. To a large mixing bowl, add cream cheese and mayonnaise.
  2. Mix to combine.
  3. Add cheddar cheese, mozzarella, parmesan, jalapeno, red onion, and black pepper. Mix until combined.
  4. Fold in the corn, black beans, and bacon (reserve some bacon for topping the dip).
  5. Add to your favorite serving bowl and top with extra bacon.

Notes
