Description

This Loaded Cowboy Corn Dip is packed with sweet corn, black beans, crispy bacon, and three kinds of cheese for the ultimate party appetizer. It’s an easy cold dip that’s always a hit at game day parties, BBQs, potlucks, and family gatherings.


Ingredients

2 (15.25 oz.) cans of whole kernel corn, drained

1 (15.25 oz.) can of black beans, drained and rinsed

4 ounces cream cheese

1/2 cup mayonnaise

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup parmesan cheese

1 large jalapeno, diced

8 slices of bacon, cooked and chopped

1 medium red onion, diced

1 tsp. black pepper

1 tbsp. green onions, sliced


Instructions

  1. To a large mixing bowl, add cream cheese and mayonnaise.
  2. Mix to combine.
  3. Add cheddar cheese, mozzarella, parmesan, jalapeno, red onion, and black pepper. Mix until combined.
  4. Fold in the corn, black beans, and bacon (reserve some bacon for topping the dip).
  5. Add to your favorite serving bowl and top with extra bacon.
  6. Serve with crackers, chips or nacho chips.

Notes

Store Loaded Cowboy Corn Dip in an airtight container in the refrigerator for up to 3–4 days. Give the dip a good stir before serving, as some liquid may separate during storage. This dip is not recommended for freezing, as the creamy ingredients can change in texture after thawing.
