Boursin Chicken Pasta

Ingredients You’ll Need

  • 8 ounces (½ of a 1-pound box) penne pasta
  • 1 tablespoon sea salt
  • 2 Tablespoons salted butter
  • 2 Tablespoons all-purpose flour
  • 1 cup whole milk
  • ½ cup heavy cream
  • 1 (5.2-ounce) package Boursin cheese, room temperature
  • 1 teaspoon garlic powder
  • 1 cup baby spinach, packed 
  • ½ cup frozen peas
  • 1 pound boneless skinless chicken breast, cooked and cut into ½ inch cubes

Step By Step Instructions

Melted butter and flower in skillet.
Milk and heavy cream is added to the skillet.

STEP ONE – Boil a large pot of water with 1 tablespoon salt. 

STEP TWO – Add the pasta and cook according to the directions on the box until al dente. It should be cooked but still slightly firm.  

STEP THREE – Meanwhile, in a large skillet, melt the butter and add the flour.  Whisk to combine and cook for 2-3 minutes to allow the raw taste of the flour to cook off. 

STEP FOUR – Whisk in the whole milk and heavy cream until combined and slightly thickened. 

Boursin cheese is added to the skillet.
Cooked pasta, spinach, chicken are added to the sauce in the skillet.

STEP FIVE – Reduce the heat to medium-low and stir in the Boursin cheese and garlic powder until the cheese is completely melted into the sauce and everything is smooth. 

STEP SIX – Add the spinach, peas, and chicken, stirring for 1-2 minutes until the spinach wilts. It’s going to look like a lot of spinach, but I promise, it shrinks down significantly as it wilts. 

STEP SEVEN – Reserve ½ cup of the pasta water before draining and adding the pasta to the sauce. 

STEP EIGHT – Toss to coat. Add a splash of pasta water to thin the sauce to your desired consistency, and serve warm.
