Description
This Boursin Chicken Pasta is an easy weeknight dinner that tastes like something you’d order at a restaurant. Tender chicken and pasta are tossed in a rich, creamy Boursin cheese sauce for a comforting meal that’s packed with flavor and comes together with minimal effort.
Ingredients
8 ounces (1/2 of a 1-pound box) penne pasta
1 tablespoon sea salt
2 Tablespoons salted butter
2 Tablespoons all-purpose flour
1 cup whole milk
1/2 cup heavy cream
1 (5.2-ounce) package Boursin cheese, room temperature
1 teaspoon garlic powder
1 cup baby spinach, packed
1/2 cup frozen peas
1 pound boneless skinless chicken breast, cooked and cut into 1/2 inch cubes
Instructions
- Boil a large pot of water with 1 tablespoon salt.
- Add the pasta and cook according to the directions on the box until al dente. It should be cooked but still slightly firm.
- Meanwhile, in a large skillet, melt the butter and add the flour. Whisk to combine and cook for 2-3 minutes to allow the raw taste of the flour to cook off.
- Whisk in the whole milk and heavy cream until combined and slightly thickened.
- Reduce the heat to medium-low and stir in the Boursin cheese and garlic powder until the cheese is completely melted into the sauce and everything is smooth.
- Add the spinach, peas, and chicken, stirring for 1-2 minutes until the spinach wilts. It’s going to look like a lot of spinach, but I promise, it shrinks down significantly as it wilts.
- Reserve ½ cup of the pasta water before draining and adding the pasta to the sauce.
- Toss to coat. Add a splash of pasta water to thin the sauce to your desired consistency, and serve warm.
