Boursin Chicken Pasta

Description

This Boursin Chicken Pasta is an easy weeknight dinner that tastes like something you’d order at a restaurant. Tender chicken and pasta are tossed in a rich, creamy Boursin cheese sauce for a comforting meal that’s packed with flavor and comes together with minimal effort.


Ingredients

8 ounces (1/2 of a 1-pound box) penne pasta

1 tablespoon sea salt

2 Tablespoons salted butter

2 Tablespoons all-purpose flour

1 cup whole milk

1/2 cup heavy cream

1 (5.2-ounce) package Boursin cheese, room temperature

1 teaspoon garlic powder

1 cup baby spinach, packed

1/2 cup frozen peas

1 pound boneless skinless chicken breast, cooked and cut into 1/2 inch cubes


Instructions

  1. Boil a large pot of water with 1 tablespoon salt.
  2. Add the pasta and cook according to the directions on the box until al dente. It should be cooked but still slightly firm.
  3. Meanwhile, in a large skillet, melt the butter and add the flour. Whisk to combine and cook for 2-3 minutes to allow the raw taste of the flour to cook off.
  4. Whisk in the whole milk and heavy cream until combined and slightly thickened.
  5. Reduce the heat to medium-low and stir in the Boursin cheese and garlic powder until the cheese is completely melted into the sauce and everything is smooth.
  6. Add the spinach, peas, and chicken, stirring for 1-2 minutes until the spinach wilts. It’s going to look like a lot of spinach, but I promise, it shrinks down significantly as it wilts.
  7. Reserve ½ cup of the pasta water before draining and adding the pasta to the sauce. 
  8. Toss to coat. Add a splash of pasta water to thin the sauce to your desired consistency, and serve warm.
