Tips for Making Oatmeal Chocolate Chip & Peanut Butter Squares
This will be one of the easiest recipes you've ever made! Once you get hooked on these little gems, you will be making them with your eyes closed.
The mess is minimal, using only two bowls and this recipe makes up a nice big batch (thankfully!) of 30 squares.
Mix em' up into the oven they go!
Be sure that the butter is at room temperature, but not melted. Margarine will not work in this recipe. The squares will turn out very greasy and you don't want that!
Use quick oats. If you only have the large flakes, then pulse them for about 5 seconds in a food process. You cannot use steel-cut oats in this recipe.
I've experimented with this recipe a lot. Because it's in such a large pan for a square recipe, the edges will start to brown at the 20 minute mark at 350F. That's when you turn the oven down to 325F and cook for the remaining 10-15 minutes.
Don't take the pan out of the oven, just drop the oven temperature and let them keep working their magic.
Let them cool at least 15 minutes before cutting into squares
If you prefer walnuts, they're a winner in this recipe as well. I alternate back and forth depending what I have on hand.

These are the perfect afternoon treat. Tall glass of milk, cup of coffee or tea. Dare I say topped with a dollop of vanilla ice cream - oh my.
