Greek Feta Pasta Salad

If you need an easy salad recipe to bring to party or potluck, this Greek pasta salad is the perfect make-ahead salad. You’ll need to give it at least 2 hours to chill and allow the flavors to combine before serving which makes it ideal for make-ahead sides for a potluck.

Use whatever pasta shape you have on hand and you can change up the veggies too. Add in some cooked chicken to make it a complete meal.

Time-saving Tip

You can use store-bought dressing in place of the homemade dressing. Either a creamy dressing or Greek vinaigrette dressing.

Ingredients You’ll Need

16 oz Rotini Pasta

1 Whole Cucumber, quartered and sliced

10 oz Cherry Tomatoes, halved

½ Cup Red Onion, diced

10 oz Crumbled Feta Cheese

6 oz Can Black Olives, sliced

2 Bell Peppers, deseeded and diced

Dressing Ingredients

½ Cup Extra Virgin Olive Oil

⅓ Cup Red Wine Vinegar

1 Tablespoon Fresh Parsley, chopped

½ teaspoon Dried Oregano

½ teaspoon Garlic Powder

½ teaspoon Salt

½ teaspoon Black Pepper

How to Make Greek Pasta Salad

STEP ONE – Bring a large pot of salted water to a boil.

STEP TWO = Add the pasta and cook per the package directions, to al dente (about 9-10 mins).

STEP THREE – Drain and rinse under cold water.

STEP FOUR – While the pasta has been cooking, chop and prepare the rest of the ingredients.

STEP FIVE – Add to a large salad bowl the rinsed pasta, cucumbers, tomatoes, red onions, feta cheese, olives and bell peppers. Toss until mixed.

STEP SIX – In a large mixing jug add the olive oil, vinegar, parsley, oregano, garlic powder, salt and pepper and mix together with a small whisk or fork.

STEP SEVEN – Pour over the Greek pasta salad.

STEP EIGHT – Toss together with the rest of the ingredients until well distributed.

STEP NINE – Cover the salad and refrigerate for no less than 2 hours.

Party tip: Prepare Ahead!

Refrigerating the pasta salad before serving allows the flavors to fully develop and meld together. Just a couple of hours in the fridge can make a noticeable difference, enhancing the overall taste and bringing out the best in each ingredient.

Storage Instructions

Once assembled store the Greek pasta salad in an airtight container in the refrigerator for up to 4 days.
I don’t recommend freezing this pasta salad as it will affect the texture.
