Do not be scared off by the long list of ingredients! The flavor combinations are delicious and you’ll have a nice big batch to enjoy.

There are four main parts to these burrito bowls.

Creamy Sauce – made with sour cream and mayonnaise as the base for ingredients with jalapenos, cilantro and seasonings for flavor.

Rice mixture – for the cilantro lime rice, we’ve used white Jasmine rice in for the rice portion or you can use brown rice, or your favorite type of rice for a bowl recipe.

Chicken – you can use a cooked deli chicken, shredded, or cook your own boneless skinless chicken breast and shred it. The chicken is seasoned with garlic powder, pepper, chipotle peppers in Adobe sauce, pepper and lime juice

Toppings – romaine lettuce, black beans, cherry tomatoes, corn, shredded cheddar cheese, salsa (or pico de Gallo), red onion and avocado.

How to Make Homemade Burrito Bowls

These Mexican bowls are easy to make! I’ve included photos below that walk you through step-by-step and a few tips as well.

STEP ONE – Make the Sauce – In a small bowl add the sauce ingredients. Mix until thoroughly combined. Place in the fridge until ready to serve. (This can be doubled if you like a lot of sauce)

STEP TWO – Add the lettuce to the serving bowl or 4 individual bowls and set aside.

STEP THREE – In a medium-sized bowl add the rice ingredients. Mix until combined. Add the rice to the lettuce.

STEP FOUR: In a medium-sized skillet add the chicken ingredients. Cook on medium heat for 3-5 minutes until heated through. Add the chicken to the lettuce.

STEP FIVE – Next, add the salad ingredients to the bowl.

STEP SIX – Top the salad with the sauce.

Sauce is drizzled on top of the burrito bowl.

Change it up – there are so many changes that you can make to this burrito bowl recipe. Change up the toppings to your favorites.

Make it vegetarian – swap out the chicken for tofu

Prep ingredients ahead of time – having cooked rice and chicken on hand and all of the veggies prepped ahead of time will make light work of putting these together.

Make extras! – Double the recipe and have them in flour tortillas the next day!

STORAGE INSTRUCTIONS

Store leftover in the fridge for 3 to 4 days.

If prepping in advance in individual portions for meal prep, store the sauce separately and add the sauce when eaten.

Ingredients

Creamy Sauce Ingredients 

1/3 cup sour cream

1/3 cup mayonnaise

2 tablespoons milk

1 tablespoons diced jalapenos

1 tablespoon cilantro

1/4 teaspoon garlic powder

1/4 teaspoon dill

1/4 teaspoon paprika

Juice from a 1/2 lime

Chicken Ingredients

1 pound deli chicken, cooked and shredded

3 tablespoon chipotle peppers in Adobe sauce (7-ounce can)

2 teaspoons avocado oil

1 teaspoon garlic powder

1/2 teaspoon black ground pepper

1/2 squeezed lime juice

Rice Ingredients

2 cups frozen jasmine rice, defrosted and heated (or equal amount of cooked rice, cooled)

1/2 cup canned diced green chiles

1/3 cup cilantro, chopped

1/4 teaspoon coarse kosher salt

Zest and lime juice from one lime

Burrito Bowl Toppings

2 head romaine lettuce, roughly chopped

1 15-ounce black beans

10 ounce cherry tomatoes

1 cup frozen corn, defrosted

1 cup cheddar cheese, shredded

1/2 cup salsa

1/2 cup red onion, sliced

1 avocado, sliced


Instructions

  1. In a small bowl add the sauce ingredients. Mix until thoroughly combined. Place in the fridge until ready to serve. (This can be doubled if you like a lot of sauce)
  2. Add the lettuce to the serving bowl or 4 individual bowls and set aside.
  3. In a medium-sized bowl add the rice ingredients. Mix until combined. Add the rice to the lettuce.

  5. Add the salad ingredients to the bowl. 
  6. Top the salad with the sauce. 

Notes
