  • 1 – 1 ½ lbs chicken breasts 
  • 1 lb potatoes, cut into 1 inch pieces 
  • 1 red onion, chopped 
  • 1 tbsp olive oil
  • 1 tbsp garlic powder 
  • 2 tsp onion powder 
  • 1 tsp paprika 
  • ½ tsp salt 
  • ¼ tsp pepper 
  • ¼ cup buffalo sauce 
  • ⅓ cup blue cheese dressing 
  • 2 green onions, diced

Step by Step Instructions

STEP ONE – Preheat the oven to 425°F.

STEP TWO – Chop the potatoes, vegetables and chicken into bite-sized pieces.

Chicken and veggies are arranged on baking sheet.
Seasoning is added to the baking sheet,.

STEP THREE – Arrange the potatoes and red onion on one side of a large sheet pan and the chicken on the other. Drizzle with olive oil, sprinkle with the seasonings and toss each side separately until evenly coated.

STEP FOUR – Bake for 15 minutes, then toss everything and return to the oven for another 10 minutes, or until the chicken is cooked through and the potatoes are tender.

STEP FIVE – Drizzle the blue cheese dressing over everything and the buffalo sauce over the chicken.

STEP SIX – Garnish with sliced green onions and serve.
