This Sheet Pan Buffalo Chicken is an easy dinner loaded with tender chicken, roasted potatoes and veggies, all finished with spicy buffalo sauce and creamy blue cheese dressing. Everything cooks together on one pan for a flavorful weeknight meal with easy cleanup.

- 1 - 1 1/2 lbs chicken breasts
- 1 lb potatoes, cut into 1 inch pieces
- 1 red onion, chopped
- 1 tbsp olive oil
- 1 tbsp garlic powder
- 2 tsp onion powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup buffalo sauce
- 1/3 cup blue cheese dressing
- 2 green onions, diced
Instructions
- Preheat the oven to 425°F.
- Chop the potatoes, vegetables and chicken into bite-sized pieces.
- Arrange the potatoes and red onion on one side of a large sheet pan and the chicken on the other. Drizzle with olive oil, sprinkle with the seasonings and toss each side separately until evenly coated.
- Bake for 15 minutes, then toss everything and return to the oven for another 10 minutes, or until the chicken is cooked through and the potatoes are tender.
- Drizzle the blue cheese dressing over everything and the buffalo sauce over the chicken.
- Garnish with sliced green onions and serve.
