Chocolate Chip Coffee Cake

Ingredients

2 ½ cups flour

½ cup brown sugar, packed

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup buttermilk

¾ cup vegetable oil

1 egg

1 teaspoon vanilla extract

1 cup mini chocolate chips

Streusel:

½ cup brown sugar, packed

½ cup flour

¼ cup butter, melted

½ cup mini chocolate chips

Glaze:

1 cup powdered sugar

1 tablespoon milk

What can I use if I don’t have buttermilk?
You can make a substitute by mixing 1 cup of milk with 1 tablespoon of lemon juice or vinegar. Let it sit for 5 minutes before using.

Step by Step Instructions

STEP ONE -Preheat the oven to 350°F. Grease or line an 8×8-inch baking pan with parchment paper.

STEP TWO – In a small bowl, mix together ½ cup brown sugar, ½ cup flour, and ¼ cup melted butter until crumbly. Stir in ½ cup mini chocolate chips. Set aside.

STEP THREE – In a large mixing bowl, whisk together flour, brown sugar, baking powder, baking soda, and salt.

STEP FOUR – In a separate bowl, whisk together buttermilk, vegetable oil, egg, and vanilla extract until smooth.

STEP FIVE – Pour the wet ingredients into the dry ingredients and stir until just combined—avoid over mixing. Gently fold in 1 cup mini chocolate chips.

STEP SIX – Pour the batter into the prepared pan and spread evenly. Sprinkle the streusel topping evenly over the batter.

STEP SEVEN – Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for about 15–20 minutes.

STEP EIGHT- In a small bowl, whisk together powdered sugar and milk until smooth. Drizzle over the cooled cake.
