Beef Taco Salad

Description

This easy taco salad with seasoned ground beef, fresh veggies, crunchy tortilla strips and a creamy dressing is an easy salad to make for busy weeknights and ready in 25 minutes! 


Ingredients

1 pound ground beef (93%)

1 ounce taco seasoning packet

1/4 cup water

3 heads of romaine lettuce, cleaned, dried, shredded (6 cups)

1 cup black beans, drained and rinsed

1 cup corn

1 cup cherry tomatoes, halved

1 cup fiesta cheese, shredded

1 cup tortilla strips

1/8 cup jalapenos, sliced

1/8 cup cilantro, chopped

1/8 cup red onion, diced

1/8 cup black olives, sliced

1/2 cup salsa

1/2 cup sour cream

3 green onions, chopped

Directions

In a saute pan over medium heat add the ground beef. Cook for 6 to 9 minutes or until the juices run clear.

Add the taco seasoning and water. Mix for 2 to 3 minutes.

Remove the saute pan from the burner.

To your serving bowl add the remainder of the salad ingredients and the beef.

Add more salsa and sour cream if you want a creamier sauce with the salad.
