Strawberry Cupcakes with Cake Mix

Description

This shortcut recipe for Strawberry Cupcakes with Cake Mix starts with a boxed white cake mix. They’re fluffy and tender and topped with a luscious strawberry cream cheese frosting. A fresh strawberry on top makes them an irrestible treat to enjoy any time!


Ingredients

Cupcake Ingredients:

1 (18.25-ounce) box white cake mix

1 (3-ounce) box strawberry instant gelatin

1 (15-ounce) package frozen strawberries in syrup, thawed and pureed, divided

4 large eggs

1/2 cup vegetable oil

1/4 cup water

Strawberry Cream Cheese Icing Ingredients:

1/4 cup butter, softened

1 (8-ounce) package cream cheese, softened

1/4 cup pureed frozen strawberries

7 cups powdered sugar

Fresh sliced strawberries, for garnish, optional


Instructions

  1. Preheat oven to 350 degrees F. Add cupcake liners to two 12 serving cupcake pans and set aside.
  2. Use a food processor or immersion blender to puree the frozen, thawed strawberries.  Set aside.
  3. In the bowl of a stand mixer, combine the cake mix and strawberry gelatin.
  4. Add pureed strawberries (minus ¼ cup set aside), eggs, oil, and water to the dry ingredients. Mix on low until moistened, then at medium speed for 2 minutes until smooth.
  5. Scoop the batter into the liners of the prepared cupcake pans. Bake for 20-22 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
  6. Remove cupcakes from the oven. Let cool in pan for 10 minutes, then remove and place on a wire cooling rack to cool completely.
  7. For the frosting: In a large bowl, beat softened butter and cream cheese at medium speed until creamy.
  8. Add ¼ cup of reserved pureed strawberries and mix until combined.
  9. Slowly add powdered sugar, beat on medium speed till light and fluffy.
  10. When cupcakes are completely cool, frost and decorate with sliced strawberries, or as desired.

Notes

Storage Instructiosn: Place cupcakes in an airtight container and refrigerate for up to 1 week.

Allow cupcakes to come to room temperature for about 20 to 30 minutes before serving.
