Ingredients
Units
- 1/2 cup dark corn syrup
- 1/3 cup evaporated milk
- 3 cups white chocolate chips
- 3/4 cup powdered sugar
- 1 1/2 tsp vanilla extract
- 1/2 tsp maple extract
- 1 1/2 cups chopped pecans
Instructions
- Line an 8 × 8-inch baking dish with parchment paper, leaving some overhang along the sides for easy removal.
- Pour the dark corn syrup and evaporated milk into a medium to large microwave-safe bowl. Microwave on HIGH for 3 minutes.
- Immediately add the white chocolate chips, about 1 cup at a time, stirring well after each addition until completely melted and smooth.
- Working quickly, stir in the powdered sugar, vanilla extract and maple extract until well combined. Fold in 1 cup of the chopped pecans.
- Transfer the fudge mixture to the prepared baking dish and spread it into an even layer.
- Sprinkle the remaining ½ cup of chopped pecans evenly over the top. Gently press them into the fudge so they stay in place.
- Refrigerate for at least 4 hours, or overnight, until the fudge is completely firm and set.
- Use the parchment paper to lift the chilled fudge from the baking dish and transfer it to a cutting board.
- Using a large sharp knife, cut the fudge into 5 rows in each direction to make 25 pieces. Serve and enjoy.
