One Pot Kielbasa Pasta

Description

This easy One Pot Kielbasa Pasta recipe has a delicious creamy cheesy pasta with the rich savory flavor of smoked kielbasa sausage. Kielbasa pairs very well with pasta, peppers and onions making it a great versatile choice for a simple satisfying dinner ready in just 35 minutes.


Ingredients

14 ounce Polska Kielbasa sausage

1 tablespoon avocado oil

1 medium sweet onion, chopped

1 medium red bell pepper, chopped

1 medium green bell pepper, chopped

35 garlic cloves, minced

2 1/2 cups chicken broth, more as needed

10 ounce can diced tomatoes

1 cup heavy cream (or you can use milk)

1 teaspoon parsley flakes

3/4 teaspoon oregano flakes

1/8 teaspoon cayenne pepper, optional for a little spice

Salt and pepper, to taste

16 ounce uncooked Penne or Farfalle pasta

1 1/2 cups shredded cheese (I shredded about a 3/4 block of Monterey Jack)

Chopped parsley, optional for garnish


Instructions

  1. In a large dutch oven over medium-high heat,add one tablespoon of avocado oil and cook the sliced kielbasa sausage until lightly browned.
  2. Add the onions and bell peppers. Saute for 2-3 minutes just until they begin to soften. Then add garlic and saute for about 1 minute until fragrant.
  3. Add Chicken Broth,diced tomatoes,heavy cream,seasonings,and the uncooked pasta to the dutch oven. Stir to combine and ensure the pasta is mostly submerged in sauce. You can add an additional 1/2 cup of broth if more liquid is needed.
  4. Bring the pot to boil,and then reduce the heat to simmer.Simmer For About 12-16 minutes, or until the pasta reaches desired texture. Different noodles will require different cooking times. Make sure to stir often to make sure the pasta doesn’t stick to the bottom of the pot and that it cooks evenly.
  5. Once the pasta is cooked, remove the pot from the heat. Add Shredded cheese and fold together using a wooden spoon, until fully melted and combined.
  6. Garnish with fresh chopped parsley and freshly grated Parmesan cheese, if desired.

Notes

Storage and reheating instructions:

Store leftovers using an airtight container in the fridge for up to 3 days.

Reheat in a microwave safe dish using 30 second intervals in the microwave until heated through. Or in a pan over a medium heat stovetop, stirring occasionally until heated through.
