Mashed Sweet Potatoes

Description

These creamy Mashed Sweet Potatoes are an easy side dish made with butter, cream and fresh herbs, with a touch of cinnamon and nutmeg for warm, cozy flavor. Perfect for Thanksgiving, Christmas, holiday dinners or an easy fall side dish.


Ingredients

3 lb. sweet potatoes

1/4 cup butter

1/4 cup heavy cream

1 tbsp. fresh sage, minced

1 tbsp. fresh rosemary, minced

1/4 tsp. ground cinnamon

1/8 tsp. ground nutmeg

1/2 tsp salt

Pepper to taste

1 tbsp. maple syrup


Instructions

  1. Preheat the oven to 400°F.
  2. Scrub the sweet potatoes well, then carefully pierce them all over with a knife.
  3. Place the potatoes on a baking sheet and bake for about 45 minutes, or until tender.
  4. Allow the potatoes to cool until they’re comfortable to handle. Peel them, then transfer to a large mixing bowl.
  5. In a medium saucepan, heat the butter, cream, sage, rosemary, cinnamon, nutmeg, and salt until warm and steamy, stirring occasionally.
  6. Gradually add the warm cream mixture to the potatoes while mashing by hand. Add a little at a time until the potatoes reach your desired consistency; you may not need all of the mixture.
  7. Season with pepper to taste and additional salt, if needed.
  8. Transfer the mashed sweet potatoes to a serving bowl and garnish with fresh rosemary, sage, extra butter, or your favorite toppings.
