Description
This easy casserole recipe is filled with layers of ground beef with taco seasoning, green peppers, onions and a sour-cream based cheesy sauce topped with cheddar. The layers sit on top of a delicious biscuit crust. John Wayne Casserole is a great recipe and exactly what you need for a busy weeknight dinner.
Ingredients
2 cups Bisquick baking mix (mixed with 1 cup water)
2 pounds ground beef
1 packet taco seasoning
1 green pepper, diced
1 small onion, sliced
20 ounces diced canned tomatoes, drained
1 can (4 ounces) green chiles
1/2 cup sour cream
1/2 cup mayonnaise
8 ounces sharp cheddar cheese, shredded
Instructions
- Preheat oven to 350°F. Grease a 9×13-inch casserole dish.
- In a large bowl, combine water and biscuit crust. Give it one minute to sit and thicken up a little.
- Spread the biscuit dough into the bottom of the prepared 9×13-inch casserole dish.

In a large skillet, brown ground beef over medium-high heat until browned. Stir in taco seasoning and add water according to directions on taco seasoning. (usually 1/4 to 1/2 cup of water). Spread the meat mixture on top of the biscuit layer.

Drain the canned tomatoes and spread the tomatoes on top of the ground beef.

In the same skillet, cook the green pepper and sliced onions until softened – about 5 minutes. Sprinkle on top of tomatoes and ground beef mixture, followed by the can of green chiles.

In a small bowl, combine sour cream, mayonnaise and 1/2 of the shredded cheese. Spread on top of the beef mixture.
- Top with remaining cheese and bake in 350°F oven for 30 minutes. Let rest five minutes before serving.
Notes
Storage Instructions: Cool casserole, then wrap casserole dish with plastic wrap, or carefuly transfer to an airtight container. Refrigerate for up to three days.
Reheating Instructions: Reheat leftover casserole by cooking in 350°F oven until heated through. This should take about 20 minutes.
Freezing Instructions: This casserole freezes and reheats well. Cook casserole completely, then cool. Wap entire casserole dish in plastic wrap followed by a layer of aluminum foil. Freeze for up to three months. Thaw completely in the refrigerator, then reheat in 350°F oven until heated though.
