These jalapeño poppers are the ultimate party snack. Fresh jalapeños are stuffed with a creamy cheese filling and finished with a crunchy cornflake topping that bakes up golden and crisp. Ingredients
14 Large Jalapeno Peppers
8 oz Cream Cheese
1 Cup Sharp Cheddar, freshly grated
1 Cup Mozzarella, freshly grated
4 Green Onions, chopped
4 Cloves Garlic, minced
6 Slices Bacon, cooked and chopped
1 teaspoon Salt
1/2 teaspoon Black Pepper
2 Cups Cornflakes, crushed
1/2 Cup Butter, salted, melted
Instructions
- Preheat the oven to 400°F.
- Wearing gloves, cut each jalapeno pepper in half lengthways, then using a spoon scoop out the seeds and membranes of the pepper.
- Arrange the Jalapeno shells on a baking sheet lined with parchment paper.
- In a large bowl add the cream cheese, cheddar, mozzarella, green onions, garlic, bacon, salt and pepper and mix well with a spoon.
- Fill each Jalapeno half with this cheese filling.
- Add the cornflakes to a large resealable bag and crush with a rolling pin.
- Add the cornflake crumbs to a large bowl and add the melted butter. Stir well until completely combined.
- Bake in the oven for about 20 minutes, or until bubbly.
Notes
Storage Instructions: Once the jalapeno poppers have cooled completely they will need to be stored in the refrigerator for up to 4 days.
