Description

These Grilled BBQ Chicken and Pineapple Kabobs are loaded with juicy chicken, sweet pineapple, crisp bell pepper, and red onion, all brushed with a simple pineapple BBQ sauce. Grilled until smoky and caramelized, they’re an easy summer dinner that’s perfect for backyard BBQs, cookouts, and busy weeknights.


Ingredients

1 lb boneless, skinless chicken breast

15 oz can pineapple chunks

1 green bell pepper

1/2 red onion

1/2 cup barbecue sauce

2 tbsp pineapple juice (from can of pineapple)


Instructions

  1. Prepare the grill.
  2. Cut the bell pepper, onion, and chicken into 1-inch pieces.
  3. Thread the ingredients onto the skewers, alternating the green pepper, pineapple, red onion, and chicken as desired. Repeat until the skewers are full.
  4. In a small bowl, stir together the barbecue sauce and pineapple juice. Set half of the sauce mixture aside for serving.
  5. Brush both sides of the skewers with half of the barbecue sauce mixture.
  6. Arrange the skewers on the prepared grill and cook for 7 minutes. Flip and cook for an additional 7 minutes, or until the chicken is cooked through.
  7. Remove the skewers from the grill and brush with the reserved barbecue sauce mixture before serving.
