These Grilled BBQ Chicken and Pineapple Kabobs are loaded with juicy chicken, sweet pineapple, crisp bell pepper, and red onion, all brushed with a simple pineapple BBQ sauce. Grilled until smoky and caramelized, they’re an easy summer dinner that’s perfect for backyard BBQs, cookouts, and busy weeknights.
Ingredients
1 lb boneless, skinless chicken breast
15 oz can pineapple chunks
1 green bell pepper
1/2 red onion
1/2 cup barbecue sauce
2 tbsp pineapple juice (from can of pineapple)
Instructions
- Prepare the grill.
- Cut the bell pepper, onion, and chicken into 1-inch pieces.
- Thread the ingredients onto the skewers, alternating the green pepper, pineapple, red onion, and chicken as desired. Repeat until the skewers are full.
- In a small bowl, stir together the barbecue sauce and pineapple juice. Set half of the sauce mixture aside for serving.
- Brush both sides of the skewers with half of the barbecue sauce mixture.
- Arrange the skewers on the prepared grill and cook for 7 minutes. Flip and cook for an additional 7 minutes, or until the chicken is cooked through.
- Remove the skewers from the grill and brush with the reserved barbecue sauce mixture before serving.
