This quick and Easy Baked Sweet Potato recipe is perfectly baked with a soft creamy texture that is easy to enjoy. Oven roasting intensifies the natural sweetness of sweet potatoes for a comforting and delicious snack, or topped in different ways for a no fuss dinner side dish.
Ingredients
5 large sweet potatoes
1 tablespoon avocado oil
Kosher salt
Optional toppings:
Butter slices
Chives
Instructions
- Preheat oven to 425 F. Line a baking sheet with parchment paper and set aside.
- Rinse and scrub the sweet potatoes to remove any dirt, then dry them.
- Using a dinner fork, poke holes around each potato then place it onto the prepared baking tray.
- If eating the skin and you want to crisp it, rub a little oil over each one and then sprinkle it with salt. You can use additional seasonings if desired.
- Bake the potatoes for 40-50 minutes, or until fork-tender. If more time is needed, cook 5 minutes and check again.
- Once the potatoes reach the desired tenderness, slice them with a knife lengthwise and gently spread it apart.
- Serve with slices of butter, sour cream or greek yogurt, and garnish with chives if desired. Enjoy!
Notes
Storage and reheating instructions:
Once cooled store in an airtight container for up to 4 days. Store any toppings separately in own containers.
Reheat in a microwave-safe dish in the microwave with 30 second intervals until heated through.
