This Crockpot Creamy Mushroom Chicken is an easy slow cooker dinner with tender chicken simmered in a rich, creamy mushroom sauce. It’s a simple comfort food recipe that’s perfect served over mashed potatoes, rice, or egg noodles for a cozy family meal.
Ingredients
3 large boneless skinless chicken breasts (about 2 lbs)
½ teaspoon dried thyme
Salt and pepper, to taste
10.5 oz can cream of mushroom soup
1 cup sour cream
½ cup chicken broth
1 oz packet onion soup mix
12 oz sliced mushrooms
4 garlic cloves, minced
Fresh chopped parsley, for topping
Instructions
- Place chicken into the Crockpot.
- Season with thyme, salt, and pepper.
- In a bowl, combine the can of cream of mushroom soup, sour cream, chicken broth, and onion soup mix. Spread over the chicken breasts.
- Top with sliced mushrooms and garlic.
- Cover and cook on low for 4-5 hours or high for 2 1/2-3 hours, until chicken is tender.
- Slice or shred cooked chicken and then stir back into the creamy mushroom sauce. Let it cook for 5-10 minutes for the chicken to soak up the sauce and for the sauce to thicken a bit.
- Top with chopped parsley. Serve over mashed potatoes, rice, or egg noodles.
