Description

This Crockpot Creamy Mushroom Chicken is an easy slow cooker dinner with tender chicken simmered in a rich, creamy mushroom sauce. It’s a simple comfort food recipe that’s perfect served over mashed potatoes, rice, or egg noodles for a cozy family meal.


Ingredients

3 large boneless skinless chicken breasts (about 2 lbs)

½ teaspoon dried thyme

Salt and pepper, to taste

10.5 oz can cream of mushroom soup

1 cup sour cream

½ cup chicken broth

1 oz packet onion soup mix

12 oz sliced mushrooms

4 garlic cloves, minced

Fresh chopped parsley, for topping


Instructions

  1. Place chicken into the Crockpot.
  2. Season with thyme, salt, and pepper.
  3. In a bowl, combine the can of cream of mushroom soup, sour cream, chicken broth, and onion soup mix. Spread over the chicken breasts.
  4. Top with sliced mushrooms and garlic.
  5. Cover and cook on low for 4-5 hours or high for 2 1/2-3 hours, until chicken is tender.
  6. Slice or shred cooked chicken and then stir back into the creamy mushroom sauce. Let it cook for 5-10 minutes for the chicken to soak up the sauce and for the sauce to thicken a bit.
  7. Top with chopped parsley. Serve over mashed potatoes, rice, or egg noodles.
