Description
This easy Crockpot Chicken and Stuffing Recipe is budget-friendly made with tender chicken thighs and a Stove Top dressing. Using the slow cooker is ideal for dinner on busy days, and the combination of chicken and stuffing makes a hearty and delicious meal!
Ingredients
2.25 pounds boneless skinless chicken thighs
10.5 ounce can condensed cream of chicken with herbs soup
1 ½ cup chicken broth
8 ounce sour cream
6 ounce box stuffing mix (I used Stove Top’s Savory Herbs Stuffing)
1 small onion, diced
2 sticks/ribs celery, diced
¼ cup (½ stick) butter, melted
fresh parsley, for garnish (optional)
Instructions
- Place chicken thighs in an even layer inside the crockpot.
- In a large bowl, combine the condensed cream of chicken with herbs soup, chicken broth, and sour cream. Stir until well combined and then pour over the chicken breasts.
- In another bowl, combine the stuffing mix, onion, celery, and melted butter. Mix until evenly coated with butter and then spread evenly on top of the creamy chicken.
- Place the lid on the crockpot and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
- Once cooled, garnish with fresh chopped parsley. Serve over mashed potatoes and with a side of veggies. Enjoy!
Notes
Storage instructions: Once cooled, store using an airtight container in the fridge for 3 to 4 days.
Instead of adding the onions and celery in with the stuffing mix, they can be added into the cream sauce.
