Description

This Crockpot Broccoli Cheddar Soup is rich, creamy and packed with tender broccoli and plenty of cheesy flavor. With just 10 minutes of prep, the slow cooker does most of the work for an easy comfort food lunch or dinner.


Ingredients

18 ounces frozen broccoli florets

2 stalks celery, chopped fine

1/2 medium yellow onion, diced

1 tsp. garlic powder

1/4 tsp. nutmeg

1/2 tsp. black pepper

2 tsp. chicken bouillon powder

12 ounces evaporated milk

2 cups chicken broth

2 tbsp. flour

1/3 cup grated parmesan cheese

2 cups freshly shredded cheddar cheese, plus extra for topping


Instructions

  1. Add the frozen broccoli florets to the crockpot, followed by the chopped celery and diced onion.
  2. Sprinkle in the garlic powder, nutmeg, black pepper, chicken bouillon powder and flour.
  3. Pour in the evaporated milk and chicken broth, then stir everything together until well combined.
  4. Cover and cook on low for 3 to 4 hours, or until the broccoli is tender.
  5. Stir in the Parmesan and freshly shredded cheddar cheese. Continue cooking just until the cheese is completely melted and the soup is creamy.
  6. Ladle into bowls and top with extra shredded cheddar cheese before serving.
