Description

This Crockpot Beef and Noodles is the ultimate cozy comfort food dinner made with tender slow-cooked beef, egg noodles, and a rich, savory gravy. With just a few simple ingredients and minimal prep, it’s an easy family dinner that’s perfect for busy weeknights or chilly evenings.


Ingredients

2 lb. beef stew meat

1 cup chopped onion

1 tsp. salt

1/2 tsp. pepper

3-4 cloves garlic, minced

1 cup water

1 cup beef broth

1 packet au jus mix

12 ounces wide egg noodles

Optional, corn starch to thicken gravy, parsley to top


Instructions

  1. Add the beef to the Crockpot.
  2. Season with salt and pepper, then add the onion and garlic.
  3. Sprinkle the au jus mix over the beef.
  4. Pour in the water and beef broth.
  5. Stir to combine.
  6. Cover and cook on high for 3 to 4 hours or low for 6 to 8 hours.
  7. If needed, add a cornstarch slurry during the last 30 minutes of cooking to thicken the gravy.
  8. Before serving, cook the egg noodles according to the package directions.
  9. Add the cooked noodles to the Crockpot and stir to combine.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop over medium-low heat or in the microwave until heated through. Add a splash of beef broth if needed to loosen the gravy as it reheats.
