Ingredients

10 ounces pasta

4 tablespoons unsalted butter, divided

1 pound boneless skinless chicken, tenderloins, cubed

1/4 teaspoon coarse kosher salt, divided

1/4 teaspoon black pepper, divided

4 garlic cloves, minced

1 teaspoon Italian seasoning

1 teaspoon dried oregano

1/4 teaspoon garlic powder

1/8 teaspoon red pepper flakes

1 tablespoon all-purpose flour

1/2 cup chicken broth

1 cup heavy cream

1/2 cup parmesan cheese

4 ounces cream cheese, room temperature

1/8 teaspoon nutmeg

2 tablespoons parsley, chopped

Instructions

  1. Cook the pasta according to the directions, which takes 9 minutes. While the pasta is cooking move forward with the recipe.
  2. In a large saute pan add 1 tablespoon of butter over medium heat. Allow the butter to get hot, which will take 1-2 minutes. Do not let the butter get brown.
  3. Add the chicken, salt, and pepper to the saute pan over medium heat. Mix until the chicken is fully coated in the salt and pepper.
  4. Cook one side of the chicken for 3-4 minutes. Flip the chicken over and cook for an additional 3 minutes or until the juices run clear. You want an internal temperature of 165° F.  Transfer the chicken to a plate.
  5. To the saute pan add 3 tablespoons of butter, minced garlic, Italian seasoning, oregano, garlic powder, and red pepper flakes. Stir for 1 minute.
  6. Add the flour. Stir for 1 minute.
  7. Add the chicken broth. Stir for 1 minute or until thick.
  8. Add the heavy cream, parmesan cheese, cream cheese, and nutmeg. Mix for 1-2 minutes or until the sauce is thick.
  9. Taste to see if more salt and pepper is needed.
  10. Add the pasta and chicken to the sauté pan and mix until everything is coated.
  11. Sprinkle parsley and red pepper flakes on top. (optional)
