Buffalo Chicken Pinwheels

Description

These Buffalo Chicken Pinwheels are a quick and easy appetizer that’s always a hit. Filled with creamy buffalo chicken, cheddar cheese, ranch, and blue cheese crumbles, they’re the perfect make-ahead snack for game day, holiday parties, potlucks, and tailgating. Just roll, chill, slice, and serve!


Ingredients

2 cups cooked, shredded chicken (we used canned, but you can use rotisserie or just cooked chicken breast)

6 ounces cream cheese

1/2 cup shredded cheddar cheese

2 tbsp. ranch dressing

1/4 cup buffalo sauce

2 tbsp. green onion, sliced

1/4 cup blue cheese crumbles

3 large flour tortillas


Instructions

  1. In a large mixing bowl, beat the cream cheese, shredded cheddar cheese, ranch dressing, and blue cheese crumbles until smooth and well combined.
  2. Add the buffalo sauce, green onions, and shredded chicken. Stir until everything is evenly combined.
  3. Spread one-third of the chicken mixture over the first tortilla, leaving about a 1-inch border around the edges.
  4. Roll the tortilla up tightly and set aside. Repeat with the remaining tortillas and filling.
  5. Refrigerate the rolled tortillas for 1 hour to firm up.
  6. When ready to serve, slice each roll into 1-inch pinwheels. Discard the ends of the tortillas that don’t contain any filling.
