Breakfast Casserole with Hashbrowns

Ingredients

1 Pound Ground Breakfast Sausage,

4 Slices Bacon, chopped

10 Large Eggs

1/2 teaspoon Old Bay Seasoning

1/2 teaspoon Salt

1/4 teaspoon Black Pepper

1 Cup Half n Half

30 Ounces Shredded Hash Browns, thawed

1 Cup Pepper Jack Cheese, shredded

1 Cup Cheddar Cheese, shredded and divided

1/2 Yellow Onion, diced

1/2 Green Bell Pepper, diced


Instructions

  1. Preheat your oven to 350°F.
  2. Add the ground sausage and bacon pieces to a large skillet until browned. Drain and keep to the side.
  3. In a large mixing bowl, add the eggs and beat until consistent. Add the seasonings and half n half and beat again until well combined.
  4. Add the hash browns, browned meat, diced bell peppers, diced onions, pepper jack cheese and half of the cheddar cheese to a greased baking dish. Mix these ingredients until well incorporated.
  5. Pour the egg mixture evenly over the top of the ingredients.
  6. Sprinkle the remaining cheddar cheese on top and bake in the preheated oven, uncovered, for 1 hour 10 minutes.
  7. Remove and serve immediately.

Notes

Storage Instructions: Once the breakfast casserole has cooled completely, cover with foil, or decant into an airtight container and store in the refrigerator for up to 4 days..
