Description

These BLT Pinwheels are a fresh, flavorful twist on the classic sandwich! Soft flour tortillas are spread with creamy avocado-cream cheese, layered with crisp lettuce, juicy tomatoes, and savory bacon, then sliced into bite-sized pinwheels. Perfect for a quick appetizer, lunch, or party snack.


Ingredients

3 large flour tortillas

4 oz cream cheese - softened

1/4 cup mayonnaise

1 ripe avocado

Juice of 1/2 lime

1/4 tsp salt

1/4 tsp black pepper

4 slices cooked bacon - crumbled

1 large tomato - thinly sliced

3 to 4 fresh leafy lettuce leaves


Instructions

  1. In a medium bowl, mix the softened cream cheese and mayonnaise until smooth.
  2. In a separate bowl, mash the avocado. Add it to the mixing bowl along with lime juice, salt, and pepper. Mix until well combined.
  3. Lay a tortilla flat on a clean surface. Spread a generous layer of the avocado-cream cheese mixture over the entire surface.
  4. Sprinkle crumbled bacon evenly over the spread. Add a layer of lettuce, followed by tomato slices.
  5. Roll the tortilla up tightly. Repeat with remaining tortillas. Place the rolled tortillas in the freezer for 15 minutes to firm up – this helps with slicing.
  6. Remove from the freezer and slice into ½- to 1-inch pinwheels using a sharp knife. Wipe the blade clean between cuts for neat slices.
  7. Serve immediately or refrigerate until ready to enjoy.

Notes

I don’t recommend storing leftover. These pinwheels are best served on the same day since the lettuce will wilt over time.
