Ingredients
12 slices of bacon, regular cut
24 pineapple chunks (fresh or canned)
1/2 cup brown sugar
Instructions
- Preheat the oven to 350 degrees. Line a baking sheet with aluminum foil.
- Cut the bacon in half, then wrap one half piece around each pineapple chunk, and secure it with a toothpick.
- Roll the bacon wrapped pineapple pieces in the brown sugar, then arrange on the baking sheet.
- Transfer the baking sheet to the oven, and bake for 30-35 minutes, or until the bacon is done.
- Remove the baking sheet from the oven, and let sit for 5 minutes, then remove the bacon wrapped pineapple from the baking sheet and arrange on a platter to serve.
Notes
These bacon wrapped pineapple bites are best enjoyed fresh and warm, but you can store any leftovers in an airtight container in the fridge for up to 4 days. To reheat and bring back that crispy bacon texture, pop them in the oven or air fryer for a few minutes until heated through.
