Description
This easy Vanilla Cake Balls with cake mix recipe features a soft moist cake inside dipped into a white chocolate candy shell. Topped with colorful rainbow sprinkles for a fun and easy to eat bite sized cake pop treats, perfect for birthdays, bridal showers, school events or family gatherings.
Ingredients
1/2 c unsalted butter, softened
1/2 c sugar
1 c dry cake mix (yellow, white or vanilla) 1/2 c flour
1 t vanilla
1/2 t salt
1/4 c milk
2 T colorful sprinkles
10 oz white chocolate chips
Instructions

In the bowl of a stand mixer, combine the softened butter and sugar. Cream until smooth.

Add in the flour and dry cake mix. Mix on low speed just until combined – it will be crumbly looking.

Add in the vanilla, salt and milk. Mix on low speed until the mixture combines. You should be able to press it together and it forms a ball.

Chill the dough for approximately 30 minutes.

When ready to assemble, place the white chocolate chips in a microwave safe bowl and heat in 30 second increments. Stir well until smooth.

Using a spoon, dip each cake ball into the melted white chocolate and tap the excess off into the bowl. Transfer the dipped cake ball to a sheet of parchment.

Before the white chocolate sets, decorate with the sprinkles.

Allow to set.
