Description

Sheet Pan Mississippi Chicken and Potatoes is an easy one pan dinner featuring juicy chicken, buttery roasted potatoes, ranch seasoning, au jus gravy, pepperoncinis, and melted mozzarella cheese. A quick, comforting family meal with easy cleanup.


Ingredients

1 1/2 lbs chicken breast

1 1/2 lbs baby red potatoes

1/4 cup Pepperoncini juice

2 tbsp olive oil

1 oz ranch seasoning packet

1 oz au jus gravy packet

3 tbsp butter

1/2 cup sliced Pepperoncinis

1 cup Mozzarella cheese, shredded


Instructions

  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  2. Cut the potatoes in half, and cut the chicken into one inch pieces.
  3. Whisk together the pepperoncini juice, olive oil, ranch, and au jus in a large bowl, then add the chicken and potatoes, then toss to coat.
  4. Add the mixture onto the parchment lined baking sheet in an even layer.
  5. Cut the butter into small pieces and scatter over the chickens and potatoes.
  6. Bake for 25 minutes, then remove from the oven and sprinkle the pepperoncini slices and cheese over the top.
  7. Broil for 3 minutes, then serve with your favorite vegetable.
