Description
If you love Lofthouse Cookies then you’ll love making this easy classic grocery store copycat recipe at home. These soft and sweet sugar cookies are just like the original cookies and have the perfect classic pink buttercream icing with sprinkles that nobody can resist!!
Ingredients
2 1/4 cups of all-purpose flour (Spooned and Leveled)
1 tsp of baking powder
1/2 tsp of baking soda
1/4 tsp of salt
4 TBS of cornstarch
3/4 cup (1 1/2 sticks) of unsalted butter, softened
3/4 cup of granulated sugar
1 tsp of vanilla
1 egg
Frosting:
1/2 cup of unsalted butter, softened
2 cups of powdered sugar
1 tsp of vanilla
3–4 TBS of milk
1/2 TBS of corn syrup
Sprinkles (optional)
Food Coloring (optional)
Instructions
- Preheat your oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- Using a hand mixer, or stand mixer, cream butter and sugar together until light and fluffy. Add in vanilla and egg, and mix until well combined.
- Take out 2 medium-sized size mixing bowls, and using a sifter, sift together flour, baking soda, baking powder, salt, and cornstarch, alternating between the two bowls until the flour mixture has been sifted 3-4 times. The flour should have a powder texture.
- Gradually add the dry ingredients into the wet ingredients until blended. Scrape down the sides of the bowl as needed.
- Roll out the dough to ¼ inch thickness. Use a circular cookie cutter to cut out each cookie.
- Place cookies on a prepared baking sheet and leave 2 inches between each cookie.
- Bake for 7-9 minutes, until edges are lightly golden
- Remove from the oven and set aside to cool.
- To make the frosting, beat the butter and powdered sugar until light and fluffy
- Beat in the vanilla, milk, corn syrup, and food coloring until the frosting is smooth and spreadable.
- Once cookies have cooled completely, spread frosting onto each cookie and then top with sprinkles.

Can you freeze Lofthouse cookies? Yes you can! After the baked cookies have cooled place in a freezer-safe container to freeze for 2 to 3 months. While you can freeze them frosted we highly recommend you freeze them not frosted and icing them after they thaw at room temperature before serving.
You can also flash freeze them unbaked by placing your cut-out sugar cookies on a baking sheet and placing them in the freezer for 30 minutes or until frozen through. Place in freezer-safe container for up to 3 months.
Thaw at room temperature, bake, frost and sprinkle before serving.
