Ingredients
16 ounce (1 pound) bag green beans, ends trimmed
2 tablespoons avocado oil
1/2 cup slivered almonds
3-5 garlic cloves, minced
Salt, to taste
Optional garnish:
Lemon juice
Parmesan cheese
Instructions
- Bring water to boil in a large pot or saucepan and blanch the green beans for 2-3 minutes. Strain out the water and set the green beans aside.
- Heat a large cast iron skillet over medium heat. Once hot, pour in the oil. Add the slivered almonds and cook, while stirring, for about 30 seconds. They cook really fast so keep an eye on them.
- Add the minced garlic, and continue to cook and stir for 1 minute, or until the almonds are toasted and the garlic is fragrant.
- Reduce the heat to a low-medium, add the green beans into the skillet and saute together for an additional 1-2 minutes, depending on how tender you like the green beans.
- Season with salt, some fresh squeezed lemon juice, and some parmesan cheese if desired. Serve with your favorite entree. Enjoy!

Storage and reheating instructions:
Once cooled store using an airtight container in the fridge for up to 3 days.
Reheat in a pan or skillet over a medium-low heat on the stove and sauté the green beans until heated through.
