Ingredients
1 tablespoon olive oil
1 medium yellow onion, diced
1 pound ground beef
3 cloves garlic, minced
1 (1 ounce) packet of taco seasoning
2 cups beef broth
1 (15 ounce) can of pinto beans, drained
1 (15 ounce) can of black beans, drained
1 (15 ounce) can of tomato sauce
1 (14.5 ounce) can of diced tomatoes
1 (4 ounce) can of green chiles
1 1/2 cups frozen corn kernels
Instructions
- Heat the oil in a large dutch oven or stock pot over medium-high heat. Saute the onions until they soften, around 3-5 minutes.
- Add the ground beef and cook, breaking up the meat with a wooden spoon until no longer pink, around 6-8 minutes. Drain the excess fat from the beef.
- Add the garlic and taco seasoning and cook, stirring continuously, for 30 seconds to 1 minute or until fragrant.
- Add the broth, beans, tomato sauce, diced tomatoes, chiles, and corn, and stir well.
- Bring to a gentle boil, then reduce low and simmer uncovered for 15-20 minutes.
- Serve immediately with your favorite toppings.
