Level-up your Taco Tuesday with this creamy, cheesy crunchy Dorito Chicken Casserole Recipe! Layers of crushed Doritos and creamy chicken topped with even more Doritos and cheddar cheese. The whole family will love this satisfying casserole recipe and it’s so much fun with the crunched up Doritos! The kids are going to love it!
Ingredients
1 medium bag Doritos, crushed, divided
3 cup cooked chicken, shredded or cubed
1 and 1/4 cups sour cream
2 10.5 ounce cans cream of chicken soup
1 12 ounce can corn, drained
1 10 ounce can diced tomatoes, drained
1 4.5 ounce can chopped chiles
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1 teaspoon chili powder
2 1/2 cups shredded sharp cheddar cheese, divided
Instructions
- Preheat oven to 350°F. Grease a 9×13-inch baking dish with butter or cooking spray.
- Open the Doritos bag to release the air from the bag and, closing the top of the bag, squeeze to crush the Doritos into small bite-sized pieces. If you like, you can set aside a few whole Doritos for garnishing each plate.
- Spread half of the crushed Doritos into the bottom of prepared baking dish. Set the remaining Doritos aside. You will need them later.
- In a large mixing bowl, combine cooked chicken, sour cream, drained canned corn, 1 and 1/2 cups of the shredded cheddar cheese, drained tomatoes, green chiles, cream of chicken soup, ground cumin, garlic powder and chili powder. Stir until combined.
- Spread the chicken mixture on top of the crushed Doritos. I find that the easiest way to do this is to scoop it out place one collop in each corner and two in the middle. Then, spread it out with a spoon. Otherwise, it’s tricky to get the Doritos to stay in place!
- Sprinkle remaining Doritos on top, followed by the remaining cheese. Now, you’re ready to pop this creamy chicken casserole in the oven.
- Bake in 350°F oven for 25 minutes. Cheese will be melted and the Doritos on top wil be nice and crunchy when it’s done. It should also be bubbling at the edges.
Notes
Storage – Store cooled casserole then wrap the casserole dish with plastic wrap or carefully transfer to an airtight container. You can store this leftover casserole in the refrigerator for three to four days.
Freezing – I do not recommend freezing this casserole. The creamy sauce does not lend itself well to freezing.
Reheating Doritos Casserole – Cover the Dorito casserole loosely with foil and bake in a 350°F oven for 20 to 25 minutes until heated through. You can reheat individual servings in the microwave for 1 to 2 minutes.
