Easy Breakfast Hash

Description

There is nothing as hearty and satisfying as enjoying this homestyle Breakfast Hash with crispy fried potatoes, savory bacon and eggs in the comfort of your home. Once you make this breakfast hash that is a staple in many restaurants, it will be one of your go to breakfast recipes and surefire family favourite.


Ingredients

1/2 pound bacon, chopped
4-5 medium potatoes (I used Yukon gold) -6 large eggs
1 small onion, diced
1/2 teaspoon fine ground sea salt
1/4 teaspoon freshly ground black pepper Parsley for garnish


Instructions

  1. In a 10 inch, oven safe skillet, cook the bacon until crispy. Then, remove the bacon and place aside on a paper towel lined plate to drain. Leave the bacon grease in the pan.
  2. Add the small diced onion, and sauté until soft, about 2-3 minutes.
  3. Add in the diced potatoes, and sprinkle with salt and pepper. Cook until fork tender and until they have a nice golden brown crust. 10-15 minutes.
  4. Add in the cooked, and drained bacon. Add more salt and pepper if needed.
  5. Make wells in the top of the hash, and break the eggs into the wells (you can season your eggs here. I add a little salt and pepper) Cook over medium heat until the egg whites start to set, about 2-3 minutes. Transfer skillet to oven, and broil on high heat until the yolks are set to your liking. I do about 2 minutes, because we like ours a little runny.
  6. Sprinkle with freshly chopped parsley and serve!

Notes

How to store leftover breakfast hast? In our house we never seem to have any breakfast hash leftover as it is so good!! Store any leftovers in an airtight container for up to 4 days in the fridge.
