Crockpot Swamp Potatoes

Description

These viral Crockpot Swamp Potatoes are the ultimate comfort food made easy! Baby potatoes, smoked sausage, green beans, ranch seasoning, and Cajun spices slow cook together for a hearty one-pot meal that’s packed with bold flavor and perfect for busy weeknights.


Ingredients

2 lb. baby potatoes

1 lb. smoked sausage, sliced into coins

2 (14.5 oz.) cans of whole green beans, drained

1 packet ranch seasoning mix

1 tbsp. cajun seasoning

1 cup chicken broth

6 tbsp. butter


Instructions

  1. Cut the baby potatoes in half for smaller potatoes or quartered for larger potatoes, you want them to be roughly the same size.
  2. Layer those in the bottom of the crockpot.
  3. Add the sliced sausage over top.
  4. Sprinkle ranch seasoning and cajun seasoning over top.
  5. Add the broth.
  6. Cut the butter into slices and layer over top.
  7. Cook on high 3-4 hours or low 6-8.
  8. One hour before cook  time is finished, add the green beans to the pot and allow those to cook while cooking finishes.
  9. Stir to combine everything and serve.

Notes

Store leftover Crockpot Swamp Potatoes in an airtight container in the refrigerator for up to 4 days.

Reheat individual portions in the microwave in 30-second intervals until heated through, or warm larger portions in a saucepan over medium-low heat, stirring occasionally. If needed, add a splash of chicken broth to keep the potatoes moist while reheating.
