Cheesy Hashbrown Casserole with Corn Flakes Topping

Description

You have to try this Cheesy Hashbrown Casserole with Cornflakes Topping! AKA Funeral Potatoes, this recipe is a classic crowd-pleaser that’s quick to whip up and seriously delicious. With cheesy, creamy goodness, this simple casserole is the ultimate comfort food. 


Ingredients

6 Tablespoons butter, divided

1 small onion, finely chopped

1 clove garlic, minced (optional)

1 (30 ounce) bag frozen tater tots (shredded or small cubes)

1 (10.5 ounces) condensed cream of chicken soup (we used Campbell's)

1 cup sour cream

1/2 teaspoon salt

1/2 teaspoon black pepper

2 and 1/4 cups cheddar cheese, shredded; divided

2 cups cornflakes cereal, crushed

1/4 cup chopped green onions, chives or parsley (optional but tasty garnish)


Instructions

  1. Preheat oven to 350°F.  Lightly grease a 9×13-inch casserole dish and set aside.
  2. In a large skillet, melt 2 Tablespoons of butter and sauté onions for a few minutes, until softened. If using the garlic, add with the onions.
  3. In a large bowl, combine the cooked onions, thawed hash browns, condensed cream of chicken soup, sour cream, salt, pepper and 1 and 3/4 cups shredded cheese. 
  4. Spread potato mixture into prepared casserole dish.  
  5. Top with remaining 1/2 cup shredded cheddar cheese. 
  6. Melt 3 Tablespoons of butter, either on the stovetop or in the microwave in a microwave-safe dish for about 25 seconds (keep an eye on it). Combine with crushed cornflake cereal and sprinkle evenly on top of the casserole. 
  7. Bake in 350°F oven for 55 to 60 minutes or until cooked throughout and bubbly.  You will see bubbling at the edges. 

Notes

Substitutes and Variations

If you prefer to leave out the onion, you could add in 1 teaspoon of onion powder. We love the flavor that the sautéd onions gives to this dish.

For a change, add 1 red, yellow, green or orange bell pepper, diced with the onion in the frying pan. 

Chage up the toppings – If you don’t care for Cornflakes, you could substitute buttery Ritz crackers instead. Equally delicious is crushed potato chips! (leave out the butter)

Make it vegetarian by substituting the cream of chicken soup with cream of mushroom soup or cream or celery soup.

Substitute Greek yogurt for sour cream

Storage & Freezing Instructions

Store these cheesy potatoes by covering with plastic wrap, or place leftovers in an airtight container for up to 4 days. 

To reheat, microwave in 30 second intervals. You can also reheat in a 350°F oven for 10-15 minutes in an oven-safe dish, covered with foil.
