Description

These Buffalo Chicken Potato Skins are the ultimate game day appetizer. Crispy potato skins are loaded with buffalo chicken, melted cheese, and finished with blue cheese dressing and green onions for a flavorful bite that’s perfect for football parties, potlucks, and casual entertaining.


Ingredients

3 small potatoes

1 tbsp olive oil

salt

1 cup shredded, cooked chicken

3 tbsp buffalo wing sauce

1/4 cup cheddar cheese, shredded

2-3 tbsp blue cheese dressing

1 green onion, diced


Instructions

  1. Preheat the oven to 400°F. Line a small baking sheet with parchment paper.
  2. Dice the green onions and set aside.
  3. Pierce the potatoes several times with a fork. Brush them with olive oil, then sprinkle evenly with salt.
  4. Arrange the potatoes on the prepared baking sheet and bake for 1 hour, or until fork tender.
  5. Remove the potatoes from the oven and let them cool for 5–10 minutes, or until they’re cool enough to handle. Slice each potato in half lengthwise and place them cut-side down on the baking sheet. Broil for 2–4 minutes, or until the cut sides are lightly crisp.
  6. In a small bowl, toss the shredded chicken with the buffalo wing sauce until evenly coated.
  7. Turn the potato halves over. Using a small spoon, scoop out some of the flesh, leaving about a ¼-inch border around the edges and bottom.
  8. Fill each potato skin with the buffalo chicken mixture, then top with shredded cheese. Bake for 10 minutes, or until the cheese is melted and bubbly.
  9. Drizzle with blue cheese dressing and sprinkle with the sliced green onions before serving.
